Instructions
Prepare the smoker or
grill for smoking
by preheating it to a low temperature (around 200°F).
Season the cisco fish fillets with salt and pepper to taste.
Soak the wood chips in water for about 30 minutes to ensure they produce a good amount of smoke.
Place the wood chips in the smoker box or on the
grill
over indirect heat.
Lay the cisco fish fillets on the grill grates or smoker rack.
