- 1 cup Egusi ground melon seeds
- 3 cups chopped spinach
- 2 cups chopped kale
- 1 cup chopped ugwu fluted pumpkin
- 1 onion diced
- 2 tomatoes diced
- 2 bell peppers diced
- 3 cloves of garlic minced
- 1 teaspoon ground crayfish
- 1 teaspoon dried pepper flakes
- 1/2 cup palm oil
- Salt and pepper to taste
- 4 cups vegetable broth
- Freshly chopped parsley for garnish
In a large pot, heat the palm oil over medium heat.
Add the diced onions, tomatoes, bell peppers, and minced garlic. Sauté until the vegetables are soft.
Stir in the ground crayfish, dried pepper flakes, and Egusi. Cook for 5 minutes, stirring constantly.
Pour in the vegetable broth and bring to a simmer. Let it cook for 10 minutes, stirring occasionally.
Add the chopped spinach, kale, and ugwu to the pot. Season with salt and pepper.
Cook for an additional 5-7 minutes until the vegetables are tender.
Taste and adjust the seasoning if needed.
Serve the Efo Elegusi hot, garnished with freshly chopped parsley.
