Ingredients

  • 1 cup Egusi ground melon seeds
  • 3 cups chopped spinach
  • 2 cups chopped kale
  • 1 cup chopped ugwu fluted pumpkin
  • 1 onion diced
  • 2 tomatoes diced
  • 2 bell peppers diced
  • 3 cloves of garlic minced
  • 1 teaspoon ground crayfish
  • 1 teaspoon dried pepper flakes
  • 1/2 cup palm oil
  • Salt and pepper to taste
  • 4 cups vegetable broth
  • Freshly chopped parsley for garnish

Instructions

  • In a large pot, heat the palm oil over medium heat.
  • Add the diced onions, tomatoes, bell peppers, and minced garlic. Sauté until the vegetables are soft.
  • Stir in the ground crayfish, dried pepper flakes, and Egusi. Cook for 5 minutes, stirring constantly.
  • Pour in the vegetable broth and bring to a simmer. Let it cook for 10 minutes, stirring occasionally.
  • Add the chopped spinach, kale, and ugwu to the pot. Season with salt and pepper.
  • Cook for an additional 5-7 minutes until the vegetables are tender.
  • Taste and adjust the seasoning if needed.
  • Serve the Efo Elegusi hot, garnished with freshly chopped parsley.
